Well, there's two ways to go about this. First would be to have the printer attached to only one computer, which you control, so the student would have to bring their document to that computer to print. This has the advantage of being relatively cheap to implement but can be a hassle for the students. The other method would be to install some kind of print manager software onto all the printers so you can control the printing via software. In this latter method, after the student "prints" you would have to "release" the print job before the printer would actually print anything.
